Marine environments wherein long-term microbial oxygen consumption exceeds oxygen replenishment can be associated with oxygen minimum zones (OMZ). The Bay of Bengal OMZ (BOB-OMZ) is one of the most intense OMZs globally. To assess the contribution of bacterial oxygen consumption to oxygen loss in BOB-OMZ, we measured bacterial production (BP), temperature, salinity, and dissolved oxygen (DO) in the whole water column. We then compared the estimated bacterial oxygen demand (BOD) with diapycnal oxygen supply (DOS) at depths of 50-200 m in the southern BOB in January 2020. The average BP was 3.53 ± 3.15 µmol C m-3 h-1 in the upper 200 m of four stations, which was lower than those reported in other tropical waters. The vertical distribution of BP differed between the open ocean and nearshore areas. In the open ocean, temperature and DO were the most important predictors for BP in the whole water column. In the nearshore areas, when DO increased sharply from the suboxic state, extremely high BP occurred at 200 m. The average estimated BOD/DOS could reach up to 153% at depths of 50-200 m, indicating advection and anticyclonic eddies probably are important DO replenishment pathways in the BOB.

Houttuynia cordata polysaccharides (PSY) are known to exhibit a variety of beneficial activities, but these are currently not specifically utilized in food. Hence, using the two edible parts of Houttuynia cordata, a herbaceous plant native to Southeast Asia, this study developed polysaccharides of a stem (HCPS)-whey protein concentrate (WPC) complex and a leaf (HCPL)-WPC complex, and studied their stability, structure and antioxidant activity. The results showed that stability differed in complexes with different proportions, exhibiting only relative stability in the two complexes in which the ratio of HCPS-WPC and HCPL-WPC was 1:4, but increased stability in the HCPL-WPC complex (ζ-potential of HCPL-WPC: | -21.87 mv| >ζ-potential of HCPS-WPC: | -21.70 mv|). Structural characterization showed that there was electrostatic interaction between HCPS and WPC and between HCPL and WPC. The HCPL-WPC was found to have better antioxidant activity. The findings of this study, thus, provide a reference for the development of Houttuynia cordata polysaccharide applications in food.

In this study, water-soluble natural polysaccharides were extracted from the stems of Houttuynia cordata Thunb (HCPS). The optimization of the hot water extraction process using response surface methodology (RSM), and the extraction factors, were analyzed by multiple stepwise regression analysis and Pearson analysis. Then, the structural characterization and biological activity of the HCPS were investigated. The results indicated that the maximum extraction yield (2.43%) of the HCPS was obtained at the optimal condition (extraction temperature for 90 °C, extraction time for 5 h, solid-liquid ratio for 1:30 g/mL). The extraction temperature was determined to be the primary factor influencing the extraction yield. The HCPS molecules had an average molecular weight of 8.854 × 103 kDa and were primarily of mannose (Man), rhamnose (Rha), glucuronic acid (GlcA), galacturonic acid (GalA), glucose (Glc), and xylose (Xyl). In addition, the backbone of the HCPS might consist of →6)-α-d-Glcp-(1→ and →6)-ß-d-GalpA-(1→. The HCPS had no triple-helix structure. The scanning electron microscopy (SEM) results showed that the HCPS presented a smooth and uniform appearance, and some sheet and chain structures existed. Moreover, the HCPS exhibited significant anti-oxidant activity and inhibited the activity of α-amylase and α-glucosidase. These findings showed that HCPS might be developed into a potential material for hypoglycemia, and provides a reference for the development of Houttuynia cordata polysaccharide applications in food.

Changjiang (Yangtze River) Estuary has experienced severe hypoxia since the 1950s. In order to investigate potential ecological functions of key microorganisms in relation to hypoxia, we performed 16S rRNA-based Illumina Miseq sequencing to explore the bacterial diversity in the surface sediments of the hypoxic zone near the Changjiang Estuary and in the East China Sea (ECS). The results showed that numerous Proteobacteria-affiliated sequences in the sediments of the inner continental shelf were related to both sulfate-reducing and sulfur-oxidizing bacteria, suggesting an active sulfur cycle in this area. Many sequences retrieved from the hypoxic zone were also related to Planctomycetes from two marine upwelling systems, which may be involved in the initial breakdown of sulfated heteropolysaccharides. Bacteroidetes, which is expected to degrade high-molecular-weight organic matter, was abundant in all the studied stations except for station A8, which was the deepest and possessed the largest grain size. In addition, dissolved organic carbon, water depth, percentage ratio of clay to silt, salinity, and sedimentary grain size were environmental effectors that shaped the sedimentary microbial community structure. Our results showed that putative Gammaproteobacteria-affiliated sulfur-oxidizing bacteria may not only detoxify hydrogen sulfide produced by sulfate-reducing prokaryotes, but also serve as the primary producers in the marine sediments. Specific groups of aerobic Bacteroidetes and Planctomycetes participated in degrading organic matter, which might contribute to the oxygen depletion in the hypoxic zones.
